Premium teas account for about 5% of the current world's tea. Only the best top leaves and buds are hand-picked. Under the direction of the Tea Estate Master, the leaves are hand-processed and graded. Full leaf teas retain freshness and brew much better flavors.
Commercial teas account for about 95% of the current world's tea – the vast majority of which go into teabags. Mixed leaves are machine-picked along with some stems and twigs, then machine-processed by the CTC (cut, tear, curl) method into small particles. Small particles go stale faster and brew strong, but don't have nearly the flavor of premium teas.
For each 6 oz. cup of tea use a rounded teaspoon of loose leaves. Use boiling water for Black Teas, just under boiling for Oolong, and hot (about 150 degree) water for Green Tea. We've tried all of our teas at varying brewing times and have put our recommendations on the package in order to get the best flavor. Sometimes even a 15-30 second difference in brewing time makes a big change in how the tea tastes. Of course, it's all a matter of your taste... So have fun and enjoy!
All of our teas are decaffeinated using only natural CO2 (Carbon Dioxide) and Water methods – never any chemical method as commonly used in commercial teas. No matter how tea is decaffeinated, some taste is always taken away. We keep De-Caffeinated teas in small lots for the best tastes and freshest teas.
Three things to know about De-Caffeinated Teas:
1. De-Caffeinated teas or coffees are not caffeine free. The best De-Caffeinated methods remove about 95% of the caffeine. To get a totally caffeine free tea, stick with herbals.
2. Caffeine is valuable to the food industry. Often the caffeine removed from tea and coffee is collected and put back into soda pop, some pharmaceuticals, and now even water. Yes, caffeine-laced water!
3. Decaffeinate at home. This tried and true method removes about 92% of the caffeine from any tea you like – safely, effectively, and inexpensively at home. Brew your tea as normal, but pour off the tea water after 30 seconds and you have just removed about 92% of the caffeine. Then re-brew the same leaves – you’ll have to steep them a little longer than normal to get the best flavor.
